The history of the Strachítunt It is rooted in the mists of time. After centuries of appreciation, including international acclaim, this cheese experienced a period of obscurity, only to re-emerge in recent years thanks to the commitment of those who believed in its value and supported its revival. Today, Strachítunt is considered an elite cheese, part of the Italian dairy aristocracy. one of the nine Bergamo DOPs.
To guarantee its identity and protect its uniqueness, Strachítunt is protected by very strict regulations. The production area includes only the municipalities of Taleggio, Vedeseta, Gerosa (Valbrembilla), and Blello. The milk must come from cattle raised in the area, with at least 90% of Brown Alpine breed cows; the feed must consist of 65% grass and hay, with 90% of the forage coming from the Val Taleggio. Every step of the production chain is regulated with great care, precisely to preserve the quality and tradition that make this cheese unique.
The Strachítunt is, first and foremost, the cheese of his people. A product that to this day is born from the hands and expertise of those who work with it: alpine farmers, aging specialists, tasters, merchants, chefs, administrators, and enthusiasts.
