In the Brembana Valley, taste comes from what the land can give, season after season. PDO Cheeses as the Strachitunt and the Formai de Mut, produced between stables and mountain pastures; apples mountain, saffron Cultivated on small plots, small fruits, potatoes of Carona that grow at altitude and still end up in home kitchens today.

From these ingredients come traditional dishes, among others: the casoncelli, to be prepared according to the specification, the nosècc, the typical meat and cabbage roulade and the polenta taragna, made with local flours and melted cheese, served especially when it is cold.

Are local products available year-round?

Not always. Many products follow a seasonal cycle: alpine cheeses are mostly found after the summer, apples and saffron in the fall, while some processed products are available in limited quantities. Part of the appeal lies in this.

Is it possible to visit dairies or farms?

In some cases yes, but it is advisable to inquire first through the contacts on the activity detail page. Visits depend on the production periods and the daily work of breeders and farmers. Events, markets and dedicated days are often the best time to make direct contact with those who produce.

Are there better times of year to discover the taste of the Brembana Valley?

Yes. Fall is the ideal time for aged cheeses, apples (with the traditional “Apple Festival” in mid-October), saffron, chestnuts, and more hearty dishes. Summer is linked to alpine pastures and fresh produce, while winter is the right time for polenta taragna and mountain cuisine. Each season has different flavors.

Are typical products also suitable as gifts or souvenirs?

Many do, especially aged cheeses, jams, saffron and dry goods. It is good to consider seasonality and storage, but taking a local product home is one of the easiest ways to prolong the valley experience after the trip.
