La Sant'Antonio Val Taleggio Agricultural Cooperative was born in 1976 from an idea before it was a company: that of a group of farmers united by the desire to guarantee a future for their Valley and to protect a centuries-old heritage. Since its origins, the cooperative has represented much more than a productive reality: it is the beating heart of a community, a collective instrument that works daily for the common good and for the enhancement of the territory.
Tradition: the roots of taste
The deep connection to the Taleggio Valley is the basis of every product. Here, where time seems to stand still, nature contributes daily to the creation of unique milk: the high altitude pastures, temperature ranges, wild herbs and pristine environment affect every nuance of flavor. It is the Valley's terroir, the signature that makes the Cooperative's cheeses unmistakable.
Tradition, for St. Anthony's, is not simply a reminder of the past but a true method of working. The milk is processed raw and whole, as produced by the cows, without pasteurization or skimming. Every day, the tanker truck travels the narrow mountain roads to collect a living, rich and authentic milk, which the cheesemakers-true keepers of an art passed down for generations-transform into dairy excellence.
A complex process that requires experience and sensitivity: the milk changes every day and the cheesemaker must not only process it, but know how to interpret it. This is how cheeses are created that tell the story of the mountain, its history and the skilled hands that continue to give it a future.
A visit to St. Anthony's Cooperative means discovering a world where tradition, community and nature come together in a unique, genuine Alpine identity.
